Fungi : Shiitake

Also known as Chinese black mushrooms or oak mushroom. Shiitakes range in colour from tan to dark brown with broad, umbrella-shaped caps. They have a soft, spongy texture with a rich, meaty taste when cooked. Best served cooked rather than raw. They are used to add to stir-fries, pastas, soups, entrees and side dishes. Found in China and Japan where they are used to treat colds and flu, poor circulation, upset stomachs and exhaustion. Lentinan and LEM found in shiitake mushrooms are beta-glucans that appear to kick immune system cells into action to help slow the spread of cancer cells and fight infection. Also an excellent source of antioxidant Germanium with supports your immune system.
