Term/Definition

Baking Terms : Food Colouring

Any substance that is added to food to change its colour. People associate certain colours with certain flavours and this causes the colour of food to influence the perceived flavour. For this reason dyes are added to products. Sometimes the aim is to match a natural colour as perceived by the consumer such as adding red coloring to glacé cherries that would otherwise be beige. Sometimes food colouring is used for effect. For example - food colouring is added to salmon to make it more appealing. Many food colourings contain unsafe additives such as tartrazine.
