Vegetables : Okra

Also called ladies' fingers. A vegetable used in Indian, Middle Eastern and Caribbean cuisine. It is the main ingredient of gumbo and is also added to ratatouille. The vegetable consists of a long green pod with a slightly fuzzy skin enclosing edible seeds. The juice of okra thickens dishes while cooking.

Our favourite summer cocktail is refreshingly different and delightful to taste. Why not try it out on your friends on a hot summer’s day to add a bit of fun into their lives. The Big Blue is a beautiful drink to serve and brightens up any party!

FYI: A cocktail is a drink made from various spirits, fruit juices etc. or the name given to an appetiser containing shellfish or fruit.

Our Summer Herb: BASIL

BASIL is a distinctive Mediterranean herb, delicious with all tomato-based dishes and is most effective when fresh and added at the end when the dish is just cooked. The leaves should be torn rather than chopped with a knife. Holy Basil is used for Thai and Asian cooking. Sweet Basil is used for Mediterranean dishes. Dried basil is delicious sprinkled over pizzas, roasted vegetables and grilled fish.

Pesto is a dark green classic Italian sauce traditionally made from lots of basil, garlic, pine nuts, Parmesan cheese, and olive oil. It is served with freshly cooked pasta; spread on chicken or fish before grilling or spread onto bruschetta as a starter dish.

Basil is useful as a calming aid for indigestion. The leaves and flowers of basil can be used for an infusion for the treatment of migraines, nervous tension, constipation and insomnia.
